Early Life and Education
Henri Jayer was born in 1922 in Vosne-Romanée, in the heart of Burgundy, France. After studying oenology at the University of Dijon in the 1940s, Jayer returned home and began cultivating vineyards during World War II under a métayage (sharecropping) agreement with Madame Noirot-Camuzet. This allowed him to keep a portion of the grapes and begin making wine under his own name.
Philosophy and Innovations
Henri Jayer became renowned not just for the quality of his wines, but for pioneering a winemaking philosophy that would influence generations:
- Low Yields: He believed in sacrificing quantity for quality, maintaining extremely low yields to concentrate flavor.
- No Herbicides: He rejected chemical treatments in the vineyard, opting instead for manual labor and soil health.
- Destemming: Jayer always fully destemmed his grapes to avoid bitterness and harsh tannins.
- Cold Maceration: He introduced this now-common technique to Burgundy—allowing grapes to sit at low temperatures pre-fermentation to enhance aromatic complexity.
Cros Parantoux: From Forgotten Plot to Burgundy Legend
The Cros Parantoux vineyard was once a forgotten, frost-prone plot of land adjacent to Richebourg Grand Cru. Jayer, recognizing its potential, cleared and revived it in the 1950s and 60s. Over time, Cros Parantoux Vosne-Romanée 1er Cru became synonymous with Jayer’s legacy, often outperforming Grand Crus in both quality and price.
Family and Legacy
In 1996, Jayer retired and handed his vineyards over to his nephew Emmanuel Rouget, whom he had trained extensively. Rouget now carries the torch, making wines under his own name from former Jayer plots.
Other family members involved in Burgundy wine making include:
- Robert Jayer (cousin): Founded Domaine Jayer-Gilles, now run by his son Gilles Jayer.
- Madeleine Jayer (cousin): Married Alfred Haegelen; their descendants operate Domaine Haegelen-Jayer.
Though Jayer passed away in 2006, his wines remain some of the rarest and most collectible in the world.
